Mid-autumn Mojito cupcakes

Mojito - I just love the drink...so why not try out the cupcake alternative I asked myself. So off I went to google for recipes and lo 'n behold...it's something that other bakers dreamed up as well.

After studying the various offerings I picked one recipe that seemed to have all the trappings of a good mojito cuppie. The first batch was a spectacular failure (it's a shame I didn't snap a pic of the rubbery cakes) so I decided to fall back on familiar ground and develop my own concoction based on the fail-proof recipe from my cupcake class at Cake Connection. And here are the results from efforts on a mid-autumn evening...




Main flavouring in the cake are: mint, lime and cachacha (Brazlian rum)
Buttercream icing tinged wth lime juice and a sprinkling of chopped mint


The first batch received some good reviews from my "bake-o-ramettes" who happily chomp down the baked goods and provide me with feedback. However I thought the cake itself could do with a dash more rum and so the second batch got a larger dose of the stuff...more on that later.
